Ever since becoming vegan people everywhere love to ask, “don’t you miss cheese?!!!” My answer… not really. Of course at first I anticipated and prepared for the worst cravings of cheese ever, but not long after giving it up, the cravings dissipated. Now when a recipe calls for cheese I simply leave it off and am delightfully surprised when I can’t even tell the difference! But then sometimes, when I’m being bad, I buy some vegan cheeses and go to town (: ! My favorite two cheeses that never fail me are Daiya brand (all flavors) and Follow Your Heart mozzarella. This mozzarella cheese tastes great cold and warm and works perfectly as the cheese for a caprese salad!!
So anyways, moving on… the other night I was in the mood for some pizzzzaaaaa!! It was cold and snowing and I just needed something warm and comforting.
Vegan Vegetable Pita Pizza
Serves 1
1 whole wheat pita (not mini)
1/2 cup tomato sauce
1/2 cup mixed vegetables (I used a leftover vegetable medley I sautéed the night before)
Pinch sea salt
Fresh ground black pepper
1/4-1/2 tsp. garlic powder
1/3 cup Daiya cheese
1 ounce Follow Your Heart brand mozzarella cheese, cut into squares
1 Tbsp. olive oil; for drizzling on crust
Directions:
Preheat a toaster oven, or large oven, to 350 degrees fahrenheit.
Layer the ingredients onto the pita in the order listed being sure to leave 1/4 to 1/2 inch of space around the edge (this is the crust). Drizzle the olive oil onto the pitas outer edge and place onto the rack of the preheated oven. Bake for about 15 to 20 minutes, or until the cheese is melted and the pita is crisp. Enjoy!!
