Vegan Spreadable Cheese (and Day 10)

Ryan and I are there!  We’re halfway there!  Well… Ryan’s halfway there.  After the 21-day cleanse I’m attempting a 5-7 day juice cleanse.  I’m looking forward to the juice cleanse because I’ve pretty much already gone through the detox at the beginning of this cleanse (detox symptoms = moodiness, sickness, muscle fatigue, and headache) and so I’m thinking the only feeling I’ll be experiencing is happiness.

Morning juice (8:30 a.m.) – red kale, celery, 2 cucumbers, 2 green apples and a pear

Breakfast (11 a.m.) – raw banana bread walnuts

Lunch (1:30 p.m.) – 2 slices zucchini millet bread spread with some herbed cheese and filled with spinach + a side of sliced green bell pepper

Dinner (5 p.m.) – plain jane salad with lettuce, onion, carrots and heirloom tomato then topped with the final remains of the curried cauliflower

Night time snack – 1/2 pint raspberries YUM

And now here’s my new favorite recipe (I feel like I’ve been saying that about all the raw recipes I’ve been making).  This nut cheese reminds me so much of alouette it’s uncanny!  I first made it for tomato stacks, but then I had it the other night on zucchini millet bread as a snack.  Now I am thinking the possibilities are endless:  veggie dip, cracker dip, sandwich spread, wrap filler, salad topper, ect ect!!

Vegan Raw Herbed Cheese

1 cup raw cashews, soaked

3 Tbsp. raw pepitas

1/3 cup water

Juice from 1/4 a lemon

3-4 large scallion stalks

1/2 tsp. dried rosemary

1/2 tsp. dried parsley

1/4 tsp. dried basil

1/4 tsp. dried dill

1/4 tsp. mustard powder

1/4 tsp. Herbamare spicy blend

Directions:

In a food processor combine all ingredients and pulse/blend until creamy.

 To serve:  line a serving mold with plastic wrap and pack in the herbed cheese.  Set in the refrigerator to harden.  Remove from the refrigerator and turn out onto a serving plate, remove plastic wrap.  Optional: sprinkle with ground up pepitas or fresh herbs.

Or:  roll cheese into a log then roll in ground nuts/seeds or spices; serve on a serving dish with a cheese knife.

Or you can do what I did and just spoon into a bowl.  You’ll probably dig in so fast you won’t even get to enjoy the looks!!  (:

Day 9… Dessert time!

So today was a special day!  We ate out!  Ryan and I were out shopping this morning and around 1:30 p.m. we realized we were running on merely green juice and cantaloupe…  Luckily we were close to a great vegan restaurant and bakery (;

Wildflour Vegan Bakery and Garden Grille in Pawtucket, Rhode Island.  HOLEY CRAP!  We were very lucky today they regained power (Oh Irene) and the doors were re-opened!

For l-inner (lunch-dinner) I had Reggie’s Raw Heaven.  This seriously was heaven (and I know you would agree Heather!!!).  Reggie’s Raw Heaven is a big plate of arugula that was lightly tossed in an olive oil vinaigrette then sliced mango, grapefruit and avocado is spread around and the entire dish is topped with a beet infused jicama and cashew gamasio!  BREATHE.  I gobbled it up!!  Then I couldn’t stop smiling.

We then walked two doors down to Wildflour Vegan Bakery and went nutz.  Ryan and I split the raw raspberry coconut cheesecake.  He couldn’t stop talking about it!  We also took some things to go:  2 raw-reos, a raw coconut macaroon, a raw chocolate ganache, a raw fruit leather, and raw banana bread walnuts.  Wow… typing out everything we bought makes me giggle.  Can you tell we had a sweet tooth?

Ok so enough of that, time for a recipe! (For Natalie from NittyGrits)

Raw Apple Crisp

Serves 2-4

2 sweet apples, cored and diced

1/2 orange, juiced

1/2 tsp. cinnamon + 1/4 tsp. cinnamon, divided

1/8 tsp. ginger

1/8 tsp. nutmeg

Pinch sea salt

2 Tbsp. raw pecans

2 Tbsp. raw hazelnuts

Directions:

In a medium bowl combine the diced apples, orange juice, 1/2 tsp. cinnamon, ginger and nutmeg in a bowl; toss to coat.  Let sit in the refrigerator for at least an hour.

In a food processor combine 1/4 tsp. cinnamon, sea salt, pecans and hazelnuts.  Pulse until the nuts are resembling cous cous.

Add 1/2 the nut mixture to the cinnamon apples and stir to coat.  Pour into a serving dish, or 2-4 ramekins, and top evenly with the remaining nut mixture.

Enjoy!

I love this… so healthy and fast (if you have other things to do while it sits in the fridge to soften haha!!).

Secret Recipe Club!!!

So today is DAY EIGHT of the 21-Day Cleanse!!  Yes, that’s right.  An entire week has gone by.  PHEW.

Alright, now on to the secret recipe club!  I don’t remember how I came across this WONDERFUL website, but I’m so glad I did.  There are tons of bloggers and everyone gets assigned a blog.  Most of the blogs on the site were new to me so that definitely made things a little more exciting.  Once you’re assigned a blog you search through their site to find a recipe you’d like to make or edit!

The site I was assigned was Simply Sensational Food [dot] com.  The site is filled with amazing recipes and fruit carvings.  It was hard to choose between making a smoothie, dessert or a savory dish.  In the end, savory won!

Since Ryan and I are still amidst this lovely cleanse I decided to choose a dish that could be made raw!  I chose cauliflower curry.

Fast and Raw Cauliflower Curry

Serves 4-6

1/4 cup sun dried tomatoes

1/4 cup raw cashews

1/4 cup water

2 tsp. curry powder

1/2 tsp. sea salt

1 large clove garlic

1/2 tsp. mustard powder

Black pepper, to taste

3 Tbsp. coconut oil

4 cups chopped cauliflower florets

1 cup peas

Directions:

In a food processor, or Vita-mix, puree the tomatoes, cashews and water.  Add the curry powder, garlic, sea salt, mustard powder, coconut oil and black pepper and process again to combine.

In a large bowl combine the cauliflower, peas and curry cream sauce.  Let sit for at least an hour (this is the only non-fast part) to marinate and somewhat soften.

Enjoy as a side dish, main dish or on a salad!!!  Ryan even had the great idea to puree the cauliflower as well so it may be a rice curry.  Maybe next time!!
