Wow… has it really been 5 days since I blogged last?! I feel like a piece of me is missing!!
Well since today was a long hectic day and I didn’t have the strength to cook up something great (but thanks Ryan for the amazing salad with avocado and homemade dressing!) I’ll post about a great noodle bowl I created while dog sitting last week!
Noodle Bowl with Grilled Baby Bok Choy
Serves 4
1 tsp. red pepper flakes
2 tsp. soy sauce
1/4 tsp. turmeric powder
1/2 tsp onion powder
1/2 tsp. garlic powder
1/2 tsp. mustard powder
1/2 tsp. ground ginger
Fresh ground black pepper to taste
1 Tbsp. nutritional yeast
1 tsp. red curry paste
1 1/3 + 1/3 cup vegetable broth, divided
1 pound (or more) baby bok choy, washed and dried
1 package Amoy Bean Strips
Directions:
Heat a grill pan and prepare the baby bok choy. Break the leaves apart and grill in a dry pan until grill marks appear. Set aside.
In a large saucepan, heat the first 10 ingredients until aromatic, then add the 1 1/3 cup vegetable broth and stir until combined. Meanwhile bring a large sauce pot of salted water to a boil; cook according to the package directions. Drain the noodles and add to the broth mixture. Stir gently with chopsticks.

Cut or rip the grilled baby bok choy into smaller pieces and add to the noodles. Add in the remaining 1/3 cup of vegetable broth.
Portion out onto plates and sprinkle with toasted sesame seeds.
This noodle dish was great!! It’s always good to mix things up once in a while so you don’t get bored. Something that we noticed that we might change for next time: make the bok choy a little smaller! It was yummy yet large.
Also, I want to whip this up again then turn it into a soup!! So in the end instead of adding 1/3 cup vegetable broth I’m going to add 2+ cups. Can’t wait to try it out.
