I’m having major chocolate addiction issues lately and now these are an obsession of mine. I love chocolate covered peanuts, chocolate covered pretzels and chocolate covered fruit, so I thought, Hey! why not combine all that together into a magical little truffle?! TAADDAAAAHHH!! Truly phenomenal.
Peanut Cranberry Chocolate Nests
Makes 28 nests
1 cup vegan chocolate chips
1 1/2 tsp. coconut butter
1/2 tsp. peanut oil
1/3 + 1 Tbsp. coconut milk
Dash of salt
1 tsp. vanilla
3/4 cup peanuts
1 cup pretzel pieces
1/2 cup dried cranberries
Directions:
Melt chocolate in a small saucepan (or double boiler) with the coconut butter, peanut oil, milk, salt and vanilla. Stir constantly until smooth and combined. Add in the peanuts, pretzels and cranberries. Stir to combine.
Turn off heat and scoop the mixture, by the tablespoon full, into prepared mini cupcake wrappers. Be sure to stir the mixture every couple scoops to keep all the ingredients evenly combined. Place the nests into the freezer and let sit for a few hours until firmed. Yum Yum!!
